Pasta Sauce
When I go to the food cupboard, I come home with “fresh” produce and lots of canned and boxed goods. The “fresh” produce is not really all that fresh, and needs to be eaten up pretty quickly. Since we can’t eat it all quickly enough, I make things to freeze with them.
Pasta Sauce:
1 can tomato sauce
1 or 2 tomatoes, or whatever you have on hand
1. Boil tomatoes in water until they just start to split.
2. Submerge the tomatoes in cold water until you can handle them.
3. Pour the tomato sauce into the emptied pan, and cook on medium.
4. Peel tomatoes and discard skins (or add them to compost bin). Chop. You can cut them in half and carefully take out the seeds if you want, before chopping.
5. Add tomatoes to the pot, stir, and simmer while it cooks down a bit.
*You can add herbs now or, if you will be freezing the sauce, you can add them when the sauce is reheated.
To Freeze: Allow to cool to room temperature. Pour into quart size freezer bags, leaving a little space. Label and freeze.
Yesterdays Garden Salad
Well, my garden is doing so well that my daughter and I were able to create a salad to go along with dinner from it. The cucumber was given to us by mother, as ours are not ready to be eaten yet.
butter crunch lettuce
cherry tomatoes
peas in pods (sugar snap?)
cucumber
Wash everything well. Do not peel the cucumbers, as the peels have much needed nutrients. Do cut off the ends, though. Do not shell the peas, either, as the pods also have much needed nutrients.
Cut up the lettuce and slice the cucumber, then mix it all up. Yummy!!!

Watermelon Salad
I am still using up the produce that was given to me. Here is another quick and simple idea:
Romaine leaves
watermelon chunks
European cucumber slices
shredded carrot
Enjoy!
Mango Chocolate Smoothie
Yes, I am still trying to eat up all of this produce.
Add these to blender:
1 small mango, pitted, peeled and chopped
5 large strawberries, sliced
1 cup vanilla soy milk
1 raw egg
2-3 tbsp chocolate syrup
1 tbsp wheat germ
Blend.
Strawberry Melon Shortcake
Mom picked my nephew and I up one day last week, and we all went strawberry picking. The same day, there were good deals on melons at the grocery store, and whipped topping was also on sale.
For each shortcake:
a slice of homemade angel food cake, a small sponge cake or a biscuit
sliced strawberries
watermelon chunks
honeydew melon chunks
cantaloupe chunks
whipped topping
Put cake or biscuit on a plate. Top with berries, melon, whipped topping.
Banana Apple Smoothie for 2
12 oz milk
a bit of vanilla (to taste)
1 banana
1/3 c. applesauce with cinnamom (or add cinnamon)
Blend, pour and enjoy.
