Leftover Ham: Pocket Sandwich

Here is another idea for eating up leftover ham. You can make pita bread sandwiches. My daughter, Zowie, loves pita bread sandwiches.

Ingredients:

pita bread, cut in half

ham, diced

mayo

shredded cabbage and/or lettuce and/or fresh spinach

shredded carrot

  1. Mix the ham with may.
  2. Add the vegetables and mix again.
  3. Spoon the mixture into pita pockets.

Notes:

Feel free to substitute ingredients for what you have on hand.

You could try dressing rather than mayo.

Adults will want to dice and shred ingredients for young children.

Leftover Ham: One Pan Meal

Still using up the leftover Christmas ham, you can make a one pan meal. Add other leftovers to your liking.

Ingredients:

ham, diced

potato, diced

peas

  1. Cook the potatoes until almost done then add ham and peas.
  2. Warm and serve.

Other Ingredient Options:

  • corn
  • green beans
  • carrots
  • onions

Good Served With:

  • Biscuits and butter
  • Leftover quick bread
  • Milk

Leftover Ham: A Protein Packed Breakfast

This breakfast is a yummy treat created for using up the leftovers from the Christmas ham. It is easy to make.

Ingredients:

Ham, diced

eggs

milk

shredded cheese

  1. Scramble eggs and ham together in a pan until eggs are just about done.
  2. Add shredded cheese and cook until eggs are done and cheese is melted.

Good with:

  • a fruit cup
  • Berries
  • milk or juice
  • leftover quick breads

Notes:

You can also make an omelet using these ingredients.
