Salads are great foods when it is too hot to cook, and we have been in the middle of a heat wave here in Maine. The following is just one of many salad ideas for your consideration.
Ingredients:
chicken, sandwich meat
cheese slices
cabbage
Romaine lettuce
radicchio
baby spinach
cucumber
shredded carrot
cherry tomatoes
- Cut the chicken meat into strips.
- Do the same with the cheese.
- Shred the cabbage, lettuce and radicchio.
- Chop the spinach.
- Slice the cucumber.
- Place those ingredients into a bowl, and the shredded carrots along with the tomatoes. Mix it all up.
Tips:
- Use produce from your garden to save money.
- Most of these ingredients will be available at your local food cupboard.
- Sandwich meat and cheese can be frozen for later voice so, if a sale occurs, stock up – especially if you have coupons.
Serving Suggestions:
- Serve with homemade bread or rolls.
- This would also be good served with soup.
