Meatball and Vegetable Sandwich

Like meatball subs, these can be made using leftovers. The last couple slices of bread, a slice of cheese and sliced vegetables can all be used up while making these.

Ingredients

2 slices of bread

3 leftover meatballs in sauce, sliced

cheese slice

2 tomato slices

2 zucchini or cucumber slices

  1. Warm the meatball slices in a skillet.

  2. Place the cheese on a slice of bread.

  3. Spoon warm meatball slices and sauce onto the cheese, then top with vegetables and the other slice of bread.

Tips

  • Use other vegetables, such as shredded carrot and fresh spinach.

  • Try different kinds of cheese, such as American or Provolone.

Serving Suggestions

  • Serve with a side salad of Romaine lettuce, radicchio and shredded cabbage.

Meatball Sub from Leftovers

When using leftovers, these sandwiches are easy to throw together. You simply look through the refrigerator to see what you can find. Those last three meatball is sauce. A leftover hot dog roll. A tablespoon or two of shredded cheese. Whatever is available that might make a decent sub.

Ingredients

shredded or grated cheese

hot dog roll

  1. Warm the meatballs and sauce in a skillet.

  2. Put the cheese inside the roll.

  3. When the meatballs are warm, place them inside the roll with a little sauce.

Tips

  • Use any vegetables that are leftover from other meals, such as diced tomato, onion or green pepper.

  • Cheese slices can also be used.

Serving Suggestions

  • Serve with a side salad of greens and chopped cucumber.

Vegetable and Cheese Sandwich

It is often too hot to cook during the summer months, so we look for easy meals to prepare. Sandwiches are a great choice on these days. Usually, we look for some type of meat to put on a sandwich but, when using cheese, this is not necessary. The cheese will provide the serving of protein that is needed.

I like my sandwiches on 100% whole wheat bread, but you can use any kind. The following ingredients make a good combination.

Ingredients

2 slices of bread

cheese slice

2 tomato slices

4 to 6 cucumber slices

2 pickle slices

lettuce

fresh spinach

shredded carrot

  1. Put the sandwich together, adding mayonnaise or whatever else you like.

Tips

  • Purchase store brand ingredients to save money.

  • To save even more money, use fresh produce from your garden.

  • Try other vegetable combinations.

Serving Suggestions

  • Serve with a side salad of shredded cabbage and carrots.

Chamomile Green Sun Tea

I am still finding ways to use these tea bags up. This is a good tea to enjoy on the patio in the evenings. Chamomile tea is said to aid in relaxation.

NOTE: I placed the pitcher at the center of my patio table to brew. When I brought the pitcher back into the house, the tea was still as cool as the water was when I brought it out.

Ingredients

4 green tea bags (decaffeinated)

5 chamomile tea bags

1 gallon water

  1. Place the tea bags in a gallon size pitcher.
  2. Fill the pitcher with cold water and cover.
  3. Set it outside in a sunny spot for 1 hour.
  4. Bring in and place in the refrigerator.
  5. Whenever you want a glass, fill one with ice and pour the tea over it. The tea can be used as soon as it is brought in.

 

Tips

  • Use store brand tea bags to save money.
  • Use a clear glass jar.
  • Mix up the flavors using different types of tea bags.
  • Add sugar if desired. Start with 2/3 cup. Eventually, by using a little less each time making the tea, you should be able to cut down to little or no sugar.
  • You can use decaffeinated tea bags for this recipe.

 

Serving Suggestions

  • Serve over ice with a lemon slice.

Lemon Sun Tea

I hope you enjoyed the Peppermint Sun Tea recipe that I posted last week. I found that it tasted better after it had been in the refrigerator over night. It is now time for a different version of sun tea. I hope you enjoy it.

This recipe  makes 1 quart of tea. Feel free to double or triple it.

Ingredients

2 tea bags (Red Rose is a delicious brand)

1 quart water

ice

lemon slices

  1. Place the 2 tea bags into a quart size canning jar, and pour water over them.
  2. Cover and set in a sunny spot outside for 1 hour.
  3. Refrigerate.
  4. When you are ready to drink the tea, fill a glass with ice and pour the tea into it. Add a slice or two of lemon.
  5. Just before drinking, squeeze the lemon juice into the tea.

Tips

  • Add sugar to sweeten, if desired.
  • Use store brand tea bags to save money.

A Few Days Before Shopping

I have a few days left before I go grocery shopping, and am using up things to make room for what I need to purchase. I  have $10.00 set aside for if I need to pick a few things up to make what food is left stretch, but there is not a lot left this month. This is due to the fact that I actually went through this process already, for a couple of weeks before moving. I did not want to have to bring all kinds of food with me. I ended up bringing just a few bags of groceries, and did minimal shopping.

I have two food shelves here at my sisters, and a little room in the refrigerator, so I cannot purchase too much at once.

When using up what is left on hand before a shopping trip, you can get pretty creative.  Balanced meals aren’t always going to be the norm. Here are the last two dinners I have consumed:

  1. 1 small baked potato and 1/2 baked sweet potato, with a pat of butter and a chopped up string cheese. Baby carrots, raw. And raw shredded cabbage.
  2. 2 slices 100% whole wheat toast with organic peanut butter and organic mint jelly. A vanilla yogurt. Orange sections.

I do what I can to make it as healthy as possible :)

Peppermint Sun Tea

I have an extreme number of tea bags left over from my winter stores, and they must all be used up before another winter season – at which point I will replenish the stock again. I ran out of things to drink here, and have had quite enough plain water for the day (don’t really like water, but I do my best), so I decided to try my hand at sun tea. It came out pretty good.

I apologize for getting this listed here so late. My laptop has two malfunctioning shift keys and has been sent in for servicing, so I have only sporadic use a computer to get things done. It may be gone for a couple of weeks, but I will try to get on here and post once-in-a-while if at all possible.

NOTE: It may be a couple of weeks before I am actually able to post anything, but I am picking up where I left off as soon as the laptop is back to me and working properly.

Cheesecake Toppings!

I love cheesecake, though I make it all of 3 times a year — if that.  I do not usually use toppings, but there are a number of them that would be good on the recipe that I use.

  1. Blueberries arranged in the shape of a star would look nice and taste delicious.
  2. Strawberry slices can be used to line the edges of the cheesecake. Add a dollop of whipped topping to the center, and sprinkle blueberries over the topping for a patriotic look.
  3. Sprinkle mini chocolate chips or M&M’s over the top of the cake.
  4. Halve cherries and mix them with whipped topping. Spread this over the top.
  5. Banana slices would top a cheesecake nicely.
  6. Crushed candy bar can be sprinkled over the top. Try a Snickers bar, or a Score bar.
  7. Reese’s Peaces or Skittles could also be sprinkled over the top.
  8. Hot fudge or caramel topping is good spread in a thin layer over the top.
  9. Try crumbling a brownie over the top of the cheesecake.
  10. Crushed pineapple of berries would be good spread over the top.
