Meatball Sub from Leftovers

Tonight's Experiment: Stuffed Bell Peppers

When using leftovers, these sandwiches are easy to throw together. You simply look through the refrigerator to see what you can find. Those last three meatball is sauce. A leftover hot dog roll. A tablespoon or two of shredded cheese. Whatever is available that might make a decent sub.

Ingredients

meatballs in sauce

shredded or grated cheese

hot dog roll

  1. Warm the meatballs and sauce in a skillet.

  2. Put the cheese inside the roll.

  3. When the meatballs are warm, place them inside the roll with a little sauce.

Tips

  • Use any vegetables that are leftover from other meals, such as diced tomato, onion or green pepper.

  • Cheese slices can also be used.

Serving Suggestions

  • Serve with a side salad of greens and chopped cucumber.
