January 2012: 31 Day Healthy Recipe Challenge


January 1, 2012 marks the first day of the 31 Day Healthy Recipe Challenge. Each day of the monthOld Cream of Wheat advertisement, I challenge you to prepare and consume at least one healthy recipe. The recipe can be one of mine (I will be linking to the healthiest recipes I have published, and maybe even adding a few more), or one of your own. You can use someone else’s recipe as well, as long as it is healthy.

Each day I will post a recipe, or some nutritional information for you to consider. You may comment on the individual posts, sharing tips, questions and (your own) recipes. If a recipe is shared, it must be your own. Otherwise, a simple link to another persons recipe will be fine.

* When posting your own recipe, please provide your name and city/state under it. If you have a food or health related blog or website that is not a store, you may also link to it under this other information. I may ask if I can feature the recipe on this challenge page, as well as in a blog post for my other blog, The Fitness Journal. It would be great if you could also take a photograph of the finished dish in case I ask for its use.

* If I use one of your recipes, I will give you a free copy of one of my eCookBooks :-)

* One lucky person will receive a free copy of each of my eCookBooks.

The goals of this challenge are to:

  1. Provide healthy menu options on a daily basis.

  2. Prepare at least one healthy recipe each day of the challenge, hopefully continuing throughout our lives.

  3. Keep us on track with our goals and resolutions.

  4. Learn to prepare new foods.

  5. Provide nutritional information to those desiring it.

  6. Find alternatives to otherwise unhealthy food choices, while sticking to a budget.

This challenge goes well with different resolutions or goals that you may have set for yourself this year, including:

  • Eating healthier.

  • Learning to prepare healthier meals.

  • Losing weight.

  • Feeding your family better.

  • Maintaining a healthy body.

Healthy means different things to different people. Obviously, if you have health concerns, you will need to prepare different recipes than may be shared here – either by myself or others. I urge you to discuss this challenge with your doctor, and follow any guidelines you are given.

  1. Recipes can always be changed to suit your needs.

  2. You can opt to create a whole new recipe around ingredients that you can use, or to use a healthy recipe that you already know.
